Coconut Rice

Ingredients
1 – Rice – 1kg
2 – Red Bell Pepper – 150g
3 – Yellow Bell Pepper – 150g
4 – Fresh Pepper – 150g
5 – Prawn – 200g
6 – Coconut Milk – 8 tins
7 – Gizzard – 300g
8 – Onion – 150g
9 – Protein (Personal Preference)
10 – Seasoning (Maggi, Salt)
Instructions
Rice Prep:
– Wash your rice properly, and then soak in hot water until it rises a little bit.
– Drain out the water and keep ready for when you want to add it to the coconut mix.
– In a pot, add 8 x 400grams of coconut milk and allow to boil for 10 minutes.
– Add 2 seasoning cubes – 10grams each, ½ tablespoon of salt, allow to boil for another 5 minutes.
– Pour in your rice allow to boil for 40 – 50 minutes, do not allow the water to dry.
– Just when the water is almost dried and the rice is very soft, you then bring in your prawn, allow to cook with the rice for 10 minutes.
– Then add in your garnish; red pepper preferably and allow to cook on low heat for 5 minutes.
– Your food is ready.

Banga Rice
Banga Rice
- Total Time: 1 hour 45 minutes
Ingredients
1 – Rice – 1kg
2 – Banga – 2 tins
3 – Fresh Pepper – 300g
4 – Onion – 250g
5 – Crayfish – 300g
6 – Dried Fish – 600g
7 – Banga Spice – 50g
8 – Seasoning (Maggi, Salt, Grinded Pepper)
Instructions
– Wash your rice properly, then soak in hot water for 15 minutes.
– Whilst waiting, thinly slice one clove of onion.
– Chop 4 pepper fruits – thinly sliced and set aside.
– Add your banga liquid in a pot (at least 6 litres)
– Allow to boil for 10 minutes, then extract the oil on top and set aside.
– Add your onion, pepper, Maggi seasoning (10grams x 3), ½ tablespoon of salt to the boiling banga liquid and allow to boil for another 10 minutes.
– Add in your rice and allow to boil for 40 mins.
– When the rice is soft and mashy, bring in the oil extract you set aside and pour on the top of the rice and mix thoroughly and allow to boil for 15 minutes and your food is ready.

Fried Rice
Fried Rice

Ingredients
1 – Rice – 1kg – (Preferably Basmati Rice)
2 – Groundnut oil – 2 Cooking Spoon
3 – Green Pepper – 150g
4 – Green Beans – 150g
5 – Green Peas – 150g
6 – Sweet Corn – 150g
7 – Liver – 400g
8 – Spring Onion – 100g
9 – Carrot -150g
10 – Onion – 150g
11 – Seasoning (Maggi, Salt, Curry, Thyme, Fried Rice Spice)
Instructions
Veggies Prep;
– Add 2 cooking spoons of groundnut oil in a pot and allow to heat for 30 seconds.
– Slice in one onion (fry for 30 seconds).
– Pour in your green pepper, green beans, green peas, sweet corn and carrot (150 grams of each).
– Add 10 grams of seasoning cubes and a teaspoon of salt
– Allow to fry for 7 mins
– and then set aside.
Rice Prep;
– Wash your rice properly, then soak in hot water until it rises a little bit.
– Drain out the water and keep ready for when you want to add it to the mixture of vegies.
– Add 2 litres of water – 1 litre should be your meat stock and the other 1 litre should be plain water.
– Add curry, thyme, seasoning cubes (10grams x 4), ½ table spoon of salt, allow to boil.
– Then put in the washed rice. Allow to boil until water is slightly below the surface of the rice
– Add in your already chopped liver.
– When it dries completely, add your already fried veggies and pour on top, mix thoroughly.
– Add your spring onion and allow to sit in the heat for 6 minutes and it is done.

Ingredients
1 – Rice – 1kg – (Preferably Basmati Rice)
2 – Groundnut oil – 4 Cooking Spoons
3 – Fresh Pepper and Tomato Mix – 450ml
4 – Tomato Paste – 2 table spoons
5 – Onion – 150g
6 – Ginger – 50g
7 – Garlic – 50g
8 – Bay Leaf – 3 pieces
9 – Seasoning (Maggi, Salt, Curry, Thyme, Onga)
Instructions
White Rice ;
– Add water in a pot
– Allow to boil for 6mins, add your washed rice.
– Leave to boil for 6-8mins
– Drain out the water,
– Pour the rice in a sieve and rinse
– Put the rice back into the pot and add water (same level as the rice) and then adda teaspoon of salt and then allow to boil and dry.
– Your rice is ready.
Stew;
– Add 4 cooking spoons of groundnut oil in a pot and allow to heat for about 30 seconds.
– Add one sliced onion to the hot oil.
– Allow to fry for 1 – 2 minutes, and then add 450ml of blended pepper and 2 table spoons of tomatoes paste.
– Fry until it splits (stir as you fry) this takes around 15mins – 20 mins.
– Then add your meat stock to the mixture – around 1.5litres
– Also, add around 0.5litre of normal water to the pot
– Add 4 seasoning cubes of 10grams, also add a tablespoon of salt, a table spoon of curry and thyme, 2 teaspoons of nutmeg, thyme, curry, onga to the mixture and allow to boil.
– Add your protein to the boiling stew, stir and allow to cook for 10 minutes, and your food is ready.

– First you have to wash your rice properly, then soak in hot water until it rises a little bit, and then drain out the water and keep ready for when you want to add it to the stew.
– Add 2 cooking spoons of groundnut oil in a pot and allow to heat for about 30 seconds
– Add one sliced onion to the hot oil
– Allow to fry for 1 to 2 minutes, then add 400ml of blended pepper and 2 table spoons of tomatoes paste.
– Fry until it splits (stir as you fry) this takes around 15mins – 20 mins.
– Then add your meat stock to the mixture – around 1.5litre
– Also, add around 1.5litre of normal water to the pot
– Add 4 seasoning cubes of 10grams, also add a tablespoon of salt, a table spoon of curry and thyme, 2 teaspoons of nutmeg to the mixture and allow to boil.
– Whilst boiling, add 1kg of washed rice, stir and mix, allow to cook until it’s dry (20 – 30 mins) – use medium heat
When the water is dry, you stir and add your garnish.
