Stew Rice

Ingredients

Scale

1 – Rice – 1kg – (Preferably Basmati Rice)
2 – Groundnut oil – 4 Cooking Spoons
3 – Fresh Pepper and Tomato Mix – 450ml
4 – Tomato Paste – 2 table spoons
5 – Onion – 150g
6 – Ginger – 50g
7 – Garlic – 50g
8 – Bay Leaf – 3 pieces
9 – Seasoning (Maggi, Salt, Curry, Thyme, Onga)

Instructions

White Rice ;
– Add water in a pot
– Allow to boil for 6mins, add your washed rice.
– Leave to boil for 6-8mins
– Drain out the water,
– Pour the rice in a sieve and rinse
– Put the rice back into the pot and add water (same level as the rice) and then adda teaspoon of salt and then allow to boil and dry.
– Your rice is ready.

Stew;
– Add 4 cooking spoons of groundnut oil in a pot and allow to heat for about 30 seconds.
– Add one sliced onion to the hot oil.
– Allow to fry for 1 – 2 minutes, and then add 450ml of blended pepper and 2 table spoons of tomatoes paste.
– Fry until it splits (stir as you fry) this takes around 15mins – 20 mins.
– Then add your meat stock to the mixture – around 1.5litres
– Also, add around 0.5litre of normal water to the pot
– Add 4 seasoning cubes of 10grams, also add a tablespoon of salt, a table spoon of curry and thyme, 2 teaspoons of nutmeg, thyme, curry, onga to the mixture and allow to boil.
– Add your protein to the boiling stew, stir and allow to cook for 10 minutes, and your food is ready.
